Pudina pulao/Mint rice




Any form of rice pulao is always welcome at our home. We all look forward to having pulaos on Sundays as thats the only day I get time to cook elaborately. Rice pulao is one such recipe which I love to serve my family especially my kids as my pulaos  are always loaded with all the vegetables I can lay my hands on.

One such pulao I prepared last sunday was "Pudina rice pulao". Although I had used carrots, green peas and french beans, you can prepare it with or without using vegetables and with just the basic required ingredients.



My version of Mint rice pulao/Pudina pulao is very 'aromatic and rich in flavour' dish, which is subtly infused with mint flavour, along with different variety of vegetables and hence makes for a perfect nutritious and wholesome dish, which one can have with any gravy or raita.





  
Ingredients                                                                Quantity                                          

Basmati/Plain Rice                                                          : 2 cups
Caroots sliced                                                                   : 1/2 small cup
Green peas                                                                         : 1/2 small cup
French beans sliced                                                        : 1/2 small cup
Onion(sliced as shown in the pic)                               : 1 Large sized
ginger garlic paste                                                            : 1 tsp
Green Cardamom                                                              : 1 or 2
cloves                                                                                   : 1 or 2
bay leaf                                                                                : 1
Cinnamom                                                                         : 1                
2 tbsp oil/1 tbsp ghee          
salt to taste       

For making paste
Chopped pudina leaves                                                  : 1/4 cup
Chopped Corianderleaves                                             : few leaves just for taste
Green Chilli                                                                      : 1 or 2


Preparation Method :                                                                                                        

  • Wash and drain the rice and keep it aside.
  • In a pan/wok, heat oil and fry the sliced onions till it turns golden brown, once fried , drain them and keep aside.
  • In the same oil, add Bay leaf,Cardamom,cloves,Cinnamom, saute for 1-2 seconds.
  • Add ginger garlic paste and saute for 2-3 mins
  • Add all the vegetables and salt, mix well and saute for another 2-3 minutes.
  • Meanwhile grind pudina, coriander leaves and green chilli to paste and add this paste to the pan and mix everything well.
  • Add the washed rice and saute for 2 minute.
  • Add 3 cups of water and bring to a boil.
  • Reduce heat and cover with lid and cook till the rice is done.
  • Add 1-2 tsp pf ghee or butter and mix well
  • Decorate with fried onion.
Mix well before serving. Serve hot with raita.
